Whisk together the flour, confectioners’ sugar, baking powder and salt in a large bowl.
Whisk together the milk, melted butter, vanilla and egg yolk in a medium bowl until combined.
Beat the egg whites and cream of tartar in another large bowl with an electric mixer on medium high speed until stiff peaks form, about 2 minutes.
Stir the milk mixture into the flour mixture until just combined (it’s OK if there are a few lumps). Stir one third of the beaten egg whites into the flour-milk mixture. One of my favorites is the Super food Salad with quinoa, avocado, feta and roasted sweet potato. I tried to re-create it at home last week and it worked out really well! It doesn’t take long to prep, as you just need to bake the potatoes, lightly steam the broccoli and cook the quinoa. All other ingredients are fresh and simply tossed together with olive oil, balsamic vinegar and lime. Using a wooden spoon or spatula, further crush the remaining chickpeas slightly to release their starchy insides.Add coconut milk and stock, and season with salt and pepper.
